Description

Bigos, also known as ‘hunter’s cabbage’, is a traditional Polish dish that combines the flavors of cabbage, meat, and spices, perfect for winter days.


Ingredients

  • 1 head of cabbage, chopped
  • 2 cups of sauerkraut, drained
  • 500g kielbasa, sliced
  • 500g pork, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon paprika
  • 2 bay leaves
  • Salt and pepper to taste
  • Water or broth as needed

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the pork and kielbasa, browning them on all sides.
  3. Mix in the chopped cabbage and sauerkraut.
  4. Add paprika, bay leaves, salt, and pepper.
  5. Pour enough water or broth to cover the ingredients.
  6. Bring to a boil, then reduce heat and simmer for at least 120 minutes, stirring occasionally.
  7. Adjust seasoning to taste before serving.

Notes

Bigos tastes even better after a day in the fridge. Consider using a variety of meats for a richer flavor.
