Description
Bigos, also known as ‘hunter’s cabbage’, is a traditional Polish dish that combines the flavors of cabbage, meat, and spices, perfect for winter days.
Ingredients

- 1 head of cabbage, chopped
- 2 cups of sauerkraut, drained
- 500g kielbasa, sliced
- 500g pork, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tablespoon paprika
- 2 bay leaves
- Salt and pepper to taste
- Water or broth as needed
Instructions
- In a large pot, sauté the onion and garlic until translucent.
- Add the pork and kielbasa, browning them on all sides.
- Mix in the chopped cabbage and sauerkraut.
- Add paprika, bay leaves, salt, and pepper.
- Pour enough water or broth to cover the ingredients.
- Bring to a boil, then reduce heat and simmer for at least 120 minutes, stirring occasionally.
- Adjust seasoning to taste before serving.
Notes
Bigos tastes even better after a day in the fridge. Consider using a variety of meats for a richer flavor.
