Delicious and simple zucchini pancakes that can be prepared in no time. Perfect as an appetizer, light lunch, or hearty snack.
Ingredients

- 2 medium zucchinis, grated
- 1 cup all-purpose flour
- 2 large eggs
- 1/2 cup grated cheese (e.g. feta or farmer’s cheese)
- 1/4 cup chopped green onion
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Oil for frying
- Sour cream for serving
Instructions
- Grate the zucchinis and squeeze out excess moisture.
- In a bowl, mix the grated zucchini, flour, eggs, cheese, green onion, salt, and pepper.
- Heat oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the hot oil and flatten slightly.
- Fry until golden brown on both sides, about 3-4 minutes per side.
- Remove and drain on paper towels. Serve warm with a dollop of sour cream.
Notes
Best served warm right after frying. Can be enjoyed with sour cream, yogurt, or fresh herbs.
