Description

Deliciously fried zucchini coated in a crispy breading served with a roasted cherry tomato and feta sauce.


Ingredients

Scale
  • 1 medium zucchini, sliced
  • Salt, to taste
  • Pepper, to taste
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Oil for frying
  • 200g cherry tomatoes
  • 100g feta cheese, crumbled
  • Olive oil, for drizzling

Instructions

  1. Slice the zucchini into thicker slices.
  2. Season with salt and pepper.
  3. Dredge the zucchini slices in flour, dip in beaten eggs, and coat with breadcrumbs.
  4. Heat oil in a pan and fry the zucchini until golden brown.
  5. In the same pan, add the cherry tomatoes and cook until they burst and release juices.
  6. Add crumbled feta cheese and combine everything; drizzle with olive oil before serving.

Notes

For extra flavor, add a pinch of garlic powder to the egg mixture.
