Description
Deliciously fried zucchini coated in a crispy breading served with a roasted cherry tomato and feta sauce.
Ingredients

- 1 medium zucchini, sliced
- Salt, to taste
- Pepper, to taste
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- Oil for frying
- 200g cherry tomatoes
- 100g feta cheese, crumbled
- Olive oil, for drizzling
Instructions
- Slice the zucchini into thicker slices.
- Season with salt and pepper.
- Dredge the zucchini slices in flour, dip in beaten eggs, and coat with breadcrumbs.
- Heat oil in a pan and fry the zucchini until golden brown.
- In the same pan, add the cherry tomatoes and cook until they burst and release juices.
- Add crumbled feta cheese and combine everything; drizzle with olive oil before serving.
Notes
For extra flavor, add a pinch of garlic powder to the egg mixture.
