Krupnik is a hearty and healthy traditional Polish soup combining flavorful broth with barley and vegetables, perfect for cold days.
Ingredients

- 500g chicken or vegetable broth
- 200g barley
- 2 carrots, diced
- 1 onion, chopped
- 2–3 potatoes, diced
- 1 stalk celery, diced
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, bring the broth to a boil.
- Add barley, carrots, and onion.
- Cook for about 30 minutes, until the barley is tender.
- Add potatoes, celery, bay leaf, salt, and pepper.
- Simmer for an additional 20 minutes.
- Remove the bay leaf, adjust the seasonings if necessary, and serve hot, garnished with fresh parsley.
Notes
Krupnik is best served hot and can be enjoyed on its own or with fresh bread. Use homemade broth for better flavor.
